This is one of those dinner creations born out of digging around in the freezer and the pantry and asking What can I make that won't require a trip to the grocery store? I found a few things and threw them in the crock pot this morning on low. It smells great. Like most crock pot recipes, this could be done on the stove over higher heat in less time, but I would still allow 2 hours or so for simmering.
Ingredients 4 chicken breasts, on the bone 1 large can diced tomatoes 2 tsp crushed garlic 1 tsp basil 1 tsp oregano 1 tsp salt black pepper 1 bay leaf Optional: Mushrooms, green peppers, chopped onions... Put it all in the crock pot. Stir. Turn heat to low and cook for 8-10 hours. Serve over rice or steamed vegetables.
